Cashew Nut Mint Pakoda

A mint flavoured crunchy evening snack

Ingredients - Serves 4
  • Gram / besan flour - 1 cup
  • Rice flour - 1/2 cup
  • Cashew nut split - 10 nos
  • Mint leaves chopped - handful
  • Dry chilli powder - 1 tsp
  • Asafoetida - pinch
  • Oil - to fry
  • Salt to taste
  • Mix gram flour, chilli powder, rice flour, mint leaves, cashew nuts, asafoetida and salt together
  • Add one table spoon of hot oil and mix well using a spoon (this makes the pakoda crunchy)
  • Sprinkle little water to make dough as the dough should not become soggy
  • Heat the pan with oil for frying
  • Deep fry bite size pieces of dough until golden brown

  • Gram flour is rich in protein and has low glycemic index, which helps control diabetes
  • Gram flour does not contain gluten and is a great substitute for wheat or all-purpose flour
  • Per serving = 290 calories approximately
