Dhokla is a very popular dish in the state of Gujarat in India. It is a very filling evening snack and very easy to prepare. I once happened to taste Dhokla at a Gujarathi restaurant in Chennai. Then when I made this at home, it was well received and has since become a favourite and healthy bite at home.
Ingredients - Serves - 4
- Besan / gram flour - 1 cup
- Semolina / suji - 2 tbsp
- Curd / yogurt - 1/2 cup
- Green chilli and ginger paste - 1 tbsp
- Sugar - 2 tbsp
- Lemon juice - 2 tbsp
- Eno fruit salt - 1 tsp
- Mustard seeds - 1/2 tsp
- Coriander leaves - few
- Oil - 1 tbsp
- Salt to taste
Method
- Mix flour, suji, sugar, salt, lemon juice, curd and ginger chilli paste in a bowl
- Add water to make the batter
- Mix without any lumps to make it into a moderately thick batter and NOT pouring consistency (This is key to get a soft & fluffy texture)
- Add Eno salt and mix the batter, you will see bubbles coming up
- Grease dhokla plate with oil and pour the batter into it (or you can use cooker vessel for steaming)
- Steam for 5 to 7 minutes
- Allow it to cool and remove from the dhokla plate by patting the plate / vessel
- Heat 1 tbsp of oil in a pan, add mustard and let it pop
- Pour the mustard over the dhokla and garnish with coriander leaves
- Cut it into bite-size pieces or into a desired shape
- Serve with tomato ketchup or green chutney
