Dhokla

Dhokla is a very popular dish in the state of Gujarat in India. It is a very filling evening snack and very easy to prepare. I once happened to taste Dhokla at a Gujarathi restaurant in Chennai. Then when I made this at home, it was well received and has since become a favourite and healthy bite at home.




Ingredients - Serves - 4

  • Besan / gram flour - 1 cup
  • Semolina / suji - 2 tbsp
  • Curd / yogurt - 1/2 cup
  • Green chilli and ginger paste - 1 tbsp
  • Sugar - 2 tbsp
  • Lemon juice - 2 tbsp
  • Eno fruit salt - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Coriander leaves - few
  • Oil - 1 tbsp
  • Salt to taste

Method
  • Mix flour, suji, sugar, salt, lemon juice, curd and ginger chilli paste in a bowl
  • Add water to make the batter



  • Mix without any lumps to make it into a moderately thick batter and NOT pouring consistency (This is key to get a soft & fluffy texture)
  • Add Eno salt and mix the batter, you will see bubbles coming up 
 

  • Grease dhokla plate with oil and pour the batter into it (or you can use cooker vessel for steaming)


  • Steam for 5 to 7 minutes

 
  • Allow it to cool and remove from the dhokla plate by patting the plate / vessel

  • Heat 1 tbsp of oil in a pan, add mustard and let it pop
  • Pour the mustard over the dhokla and garnish with coriander leaves


  • Cut it into bite-size pieces or into a desired shape
  • Serve with tomato ketchup or green chutney

  • Gram flour is a very good source of fibre and folic acid
  • Gram flour is also rich in protein and minerals
  • Per Serving = 110 calories approximately
