Veggie Quesadilla

Having lived in Texas for few years, I have always felt the cultural resemblances between India and Mexico. Tortillas are the Mexican form of Indian rotis, which is the main ingredient in this recipe. Quesadilla is a Mexican toasted cheesy savory sandwich. This is one of my kid's favs and with a variety of stuffing options, this is sought-after lunch as well.

 







Ingredients - Serves 4
  • Large wheat tortilla - 4 (or any tortilla or chapati)
  • Chopped onion - 1/2 cup
  • Chopped carrots & potatoes - 1/2 cup (Add any other veggis of your choice )
  • Chilli powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Garam masala - 1/4 tsp
  • Grated cheddar cheese - 1/2 cup
  • Oil - 1 tbsp
Method
  • Heat the pan with 1 tbsp of oil, fry onions, carrots and potatoes
  • Add dry spices and saute well until the veggies are soft
  • Heat tawa and mildly toast one tortilla and keep it aside
  • Mildly toast another tortilla, spread the cooked veggies and cheese 
  • Place the other totilla over it and gently press and flip over to the other side 
  • Cut the Quesadilla with a regular knife or pizza cutter and serve with any dip 


















Nutritional Information
  • Wheat tortillas are low in fat and contains iron and Vitamin B. Maize tortillas are also naturally low in fat and sodium and contains calcium, potassium and fiber. Both kinds of tortillas are also low in cholesterol
  • Per serving = 350 calories approximately
