Sauted veggies blended with cooked farfalle and cheese
Ingredients - Serves 4
- Chopped onions - 1 cup
- Sliced carrots - 1/2 cup
- Chopped capsicum - 1/2 cup
- Corn kernels - 1/2 cup
- Finely chopped coriander - 1 tbsp
- Pepper powder - 1 tsp
- Olive oil - 1 tbsp
- Grated cheese - 1/4 cup
- Farfalle pasta - 1 cup
- Salt to taste
- Cook the pasta according to the instructions given on the pack and drain the water and keep it aside
- Heat the pan with oil add onions and saute well
- Add capsicum, corn and carrots
- Add required salt, pepper and cook the veggies until soft
- Add cooked pasta,coriander leaves to the veggies and mix well
- Sprinkle grated cheese on top
- Serve hot
- Pasta is rich in carbohydrates
- Pasta is very low in sodium and cholesterol
- Per serving = 150 calories approximately
