Easy Cheesy Farfalle

Sauted veggies blended with cooked farfalle and cheese



Ingredients - Serves 4
  • Chopped onions - 1 cup
  • Sliced carrots - 1/2 cup
  • Chopped capsicum - 1/2 cup
  • Corn kernels - 1/2 cup
  • Finely chopped coriander - 1 tbsp
  • Pepper powder - 1 tsp
  • Olive oil - 1 tbsp
  • Grated cheese - 1/4 cup
  • Farfalle pasta - 1 cup
  • Salt to taste
Method
  • Cook the pasta according to the instructions given on the pack and drain the water and keep it aside

  • Heat the pan with oil add onions and saute well
  • Add capsicum, corn and carrots

  • Add required salt, pepper and cook the veggies until soft



  • Add cooked pasta,coriander leaves to the veggies and mix well


  • Sprinkle grated cheese on top



  • Serve hot

  • Pasta is very low in sodium and cholesterol
  • Per serving = 150 calories approximately
