This home-made Banana Bread is easy-to-make and a healthy breakfast for the family. The banana bread bought from the stores are high in calories and fat. So I prefer to make this at home rather than buying from the stores. This recipe is low-fat and egg-less - I used flavoured yogurt, corn starch and mashed banana instead of eggs.
Ingredients - Serves 8
- Mashed banana - 1
- Strawberry yogurt - 1/2 cup (you can use mashed fresh strawberries)
- All purpose flour (maida) - 1 1/2 cups
- Baking powder - 1 1/2 tsp
- Baking soda - 1/2 tsp
- Salt - 1/4 tsp
- Brown sugar or regular sugar - 1/2 cup
- Vanilla extract - 1 tsp
- Corn starch - 1 tsp mixed in 1/4 cup water
- Oil - 2 tbsp
- Cardamom powder or Cinnamon powder - 1/4 tsp
Method
- Pre-heat the conventional oven at 350 F
- Mix all dry ingredients in a big bowl - flour, sugar, baking powder, baking soda, cinnamon powder and salt
- In an another bowl mix all wet ingredients well - oil, vanilla extract, corn starch with water, mashed banana and strawberry yogurt
- Pour wet ingredients to dry and mix well
- Grease the baking tray with butter or oil
- Pour the cake batter into the baking tray
- Bake for 40 minutes (or until a toothpick comes clean when inserted into the bread)
Nutritional Information
- Bananas contain natural sugars, fibres and is rich in iron
- Bananas are extremely high in potassium and low in sodium, this helps in preventing high blood pressure
- Strawberries are rich in vitamin-C and also contains large amounts of anti-oxidant, anti-cancer and anti-inflammatory properties
- 1 serving = 190 calories approximately
