Paal (Milk) Payasam - Navratri Day 9

Rice cooked in simmered milk, sugar and cardamom powder


Ingredients - Serves 4

  • Milk - 5 cups
  • Sugar - 1/2 cup
  • Rice - 2 tbsp
  • Cardamom powder - 1 tsp
  • Chopped pistachio - 1 tbsp
Method
  • In a heavy bottomed vessel add milk and heat it
  • Once the milk starts boiling add washed rice
  • Cook the rice in a medium flame and stir occasionally
  • Rice should cook completely in the milk
  • Slightly mash the rice and stir occasionally to avoid overflow of milk
  • When the milk reduces to half, add sugar and cardamom powder
  • Allow the payasam to cook in a low flame for 10 to 15 minutes
  • Add chopped pistachio to the payasam
  • Serve paal payasam hot or cold

    • Milk is rich in calcium, phosphorous, magnesium and protein which are all essential for bone health
    • Per serving = 270 calories approximately
