Ingredients - Serves 4
- Cubed sweet potatoes - 1 cup
- Chili powder - 1 tsp
- Coriander powder - 1 tsp
- Jeera powder - 1 tsp
- Turmeric powder - 1/4 tsp
- Dry red chillies - 2 nos
- Mustard seeds - 1 tsp
- Grated coconut - 1 tbsp
- Oil - 1 tbsp
- Salt to taste
- Heat the pan with oil and add mustard seeds, when it pops add dry chilies
- Now add sweet potatoes and required salt
- In a bowl mix all dry ingredients - chili powder, coriander powder, jeera powder and turmeric powder with 2 tbsp of water (make a paste)
- Pour the paste over the sweet potato and mix well
- Sprinkle little water and cover with lid
- Cook until the sweet potatoes are soft and add grated coconut
- Serve hot with rice
- Sweet potato is rich in Vitamin A & C and it lowers blood pressure
- Sweet potato is also rich in fibre and is a good food for diabetes as it helps stabilize blood sugar levels
- Per serving = 140 calories approximately
