Corn Salad

Sweet, crunchy, quick and any time salad



Ingredients - Serves 4

  • Corn cob - 2 to 3 (or frozen)
  • Finely chopped tomatoes - 1/2 cup
  • Finely grated carrots - 1/2 cup
  • Lemon juice - 2 tbsp
  • Chopped coriander leaves - 2 tbsp
  • Green chillies or pepper powder to taste
  • Salt to taste
Method
  • Pressure cook the corn cob for 2 whistles with pinch of salt
  • Allow it to cool and remove the corn kernels
  • In a bowl mix cooked corn, tomatoes, carrots, lemon juice, coriander leaves, salt and pepper and serve


    Nutritional Information
    • Corn is a good source of folate, vitamin B and rich in several other nutrients such as potassium, vitamin B6, riboflavin, vitamin C and fiber
    • Per serving = 65 calories approximately
