Bombay Sandwich

Toasted whole grain bread with green chutney and vegetables is a popular road side sandwich in Bombay (Mumbai) in India.



Ingredients - Serves 4
  • Bread slices - 8 nos (I used whole grain bread)
  • Chopped coriander / cilantro - 1 cup
  • Chopped mint - 1 cup
  • Green chilli - 2 nos
  • Lemon juice - 1 tsp
  • Potato - 1 big (sliced and boiled)
  • Sliced tomato - 1 big
  • Cheese - optional
  • Pepper powder - 1 tsp
  • Chat masala or garam masala - 1 tbsp
  • Oil - 1 tbsp
  • Salt to taste
Method
  • Grind coriander, mint and green chilli into a smooth paste by adding lemon juice and required salt (add very little water to grind)
  • Spread a teaspoon of green chutney on one side of the bread slice
  • Arrange sliced potato and tomato over the green chutney with some salt, pepper and chat masala (add cheese over it - optional)
  • Cover with another slice and toast it in the iron skillet or sandwich maker by adding oil on each side
  • Serve with ketchup

    Nutritional Information
    • Whole grain bread is low in cholesterol and is a good source of dietary fibre
    • Potatoes are a good source of vitamin C, B6, copper, potassium, dietary fiber and also contain a variety of phytonutrients that have antioxidant activity
    • Tomatoes are rich in vitamins and minerals
    • Cilantro / coriander is rich in vitamin K
    • Per serving = 175 calories approximately
