Super moist, fluffy with crunchy pecans and pineapple juice - This is a simple and great tasting dessert
Ingredients - 12 to 15 mini cakes
- Whole wheat flour - 1 1/2 cups
- All purpose flour - 1/2 cup
- Brown sugar - 3/4 cup
- Baking powder - 1 1/2 tsp
- Baking soda - 3/4 tsp
- Roughly chopped pecans - 1/4 cup
- Salt - 1/4 tsp
- Pineapple juice - 1/2 cup
- Oil - 1/4 cup
- Vanilla essence - 1 tsp
- Flax seed - 2 tbsp (powder and mix in 6 tbsp of water)
- Mix all dry ingredients - wheat flour, all purpose flour, brown sugar, baking powder, baking soda, pecans and salt together
- In a separate bowl mix all wet ingredients- pineapple juice, oil, vanilla and flax mixed in water
- Add dry ingredients to the wet mixture and mix well
- Grease the pan with butter and pour the mixture in it
- Pre-heat the conventional oven at 360 degree C
- Bake for 25 - 30 minutes (or until a toothpick comes clean when inserted into the cake)
- Allow the cake to cool and cut them into bite size pieces
