Pineapple Flavoured Pecan Cake (Eggless)

Super moist, fluffy with crunchy pecans and pineapple juice - This is a simple and great tasting dessert



Ingredients - 12 to 15 mini cakes
  • Whole wheat flour - 1 1/2 cups
  • All purpose flour - 1/2 cup
  • Brown sugar - 3/4 cup
  • Baking powder - 1 1/2 tsp
  • Baking soda - 3/4 tsp
  • Roughly chopped pecans - 1/4 cup
  • Salt - 1/4 tsp
  • Pineapple juice - 1/2 cup
  • Oil - 1/4 cup
  • Vanilla essence - 1 tsp
  • Flax seed - 2 tbsp (powder and mix in 6 tbsp of water)
Method
  • Mix all dry ingredients - wheat flour, all purpose flour, brown sugar, baking powder, baking soda, pecans and salt together
  • In a separate bowl mix all wet ingredients- pineapple juice, oil, vanilla and flax mixed in water
  • Add dry ingredients to the wet mixture and mix well
  • Grease the pan with butter and pour the mixture in it
  • Pre-heat the conventional oven at 360 degree C
  • Bake for 25 - 30 minutes (or until a toothpick comes clean when inserted into the cake)


  • Allow the cake to cool and cut them into bite size pieces

  • Pineapples are also rich in bromelain which reduces the risk of blood clots
  • Pecans are rich in minerals, vitamins and antioxidants
  • Per serving = 155 calories approximately
