Sweet Potato Salad

Sweet potato salad is a great tasting and refreshing salad. This salad gives a fabulous sweet and savoury taste.

Ingredients - Serves 4
  • Sweet potato - 1 cup (boiled, peeled and chopped)
  • Chopped cucumber - 1 cup
  • Finely chopped coriander - 1 tbsp
  • Chaat masala - 1 tsp
  • Red chilli powder - 1/2 tsp
  • Lemon juice - 1 tsp
  • Salt to taste
  • Make sure to chop sweet potato and cucumber into same sized pieces
  • Mix all the ingredients in a big bowl and serve immediately
  • If serving later add lemon juice just before serving, so that the salad does not dry out

Tip - If sweet potato turns little mushy refrigerate it for 30 minutes

  • Sweet potato is rich in  Vitamin A & C and it lowers blood pressure
  • Sweet potato is also rich in fibre and is a good food for diabetes as it helps stabilize blood sugar levels
  • Cucumber helps us to reduce weight because of low calorie content and is rich in fibre
  • Per serving = 50 calories approximately
