Ingredients - Serves 4
- Sweet potato - 1 cup (boiled, peeled and chopped)
- Chopped cucumber - 1 cup
- Finely chopped coriander - 1 tbsp
- Chaat masala - 1 tsp
- Red chilli powder - 1/2 tsp
- Lemon juice - 1 tsp
- Salt to taste
- Make sure to chop sweet potato and cucumber into same sized pieces
- Mix all the ingredients in a big bowl and serve immediately
- If serving later add lemon juice just before serving, so that the salad does not dry out
Tip - If sweet potato turns little mushy refrigerate it for 30 minutes

- Sweet potato is also rich in fibre and is a good food for diabetes as it helps stabilize blood sugar levels
- Cucumber helps us to reduce weight because of low calorie content and is rich in fibre
