Baby Corn Soup

Hearty, warming easy wholesome meal



Ingredients - Serves 4

  • Baby corns - 10 nos
  • Chopped onions - 1/2 cup
  • Chopped ginger - 1 tsp
  • Milk - 2 cups
  • Oil - 1 tbsp
  • Salt and pepper to taste 
Method
  • Cut 3 to 4 baby corns into 1/2 inch size pieces and cook them soft and keep it aside
  • Heat the pan with oil and add onions and ginger
  • Saute well and add rest of chopped baby corns
  • Cook until the baby corns are soft
  • Cool it and blend it into a smooth paste in the mixer
  • Heat the pan and pour the paste and now add milk and cooked corn pieces
  • Allow it to boil, reduce the heat and add salt and pepper
  • Serve hot with croutons

    • Baby corn is a good source of folate, vitamin B and rich in several other nutrients such as potassium, vitamin B6, riboflavin, vitamin C and fiber.
