Hearty, warming easy wholesome meal
Ingredients - Serves 4
- Baby corns - 10 nos
- Chopped onions - 1/2 cup
- Chopped ginger - 1 tsp
- Milk - 2 cups
- Oil - 1 tbsp
- Salt and pepper to taste
- Cut 3 to 4 baby corns into 1/2 inch size pieces and cook them soft and keep it aside
- Heat the pan with oil and add onions and ginger
- Saute well and add rest of chopped baby corns
- Cook until the baby corns are soft
- Cool it and blend it into a smooth paste in the mixer
- Heat the pan and pour the paste and now add milk and cooked corn pieces
- Allow it to boil, reduce the heat and add salt and pepper
- Serve hot with croutons
- Baby corn is a good source of folate, vitamin B and rich in several other nutrients such as potassium, vitamin B6, riboflavin, vitamin C and fiber.
