Sweet, crunchy, quick and any time salad
Ingredients - Serves 4
- Corn cob - 2 to 3 (or frozen)
- Finely chopped tomatoes - 1/2 cup
- Finely grated carrots - 1/2 cup
- Lemon juice - 2 tbsp
- Chopped coriander leaves - 2 tbsp
- Green chillies or pepper powder to taste
- Salt to taste
- Pressure cook the corn cob for 2 whistles with pinch of salt
- Allow it to cool and remove the corn kernels
- In a bowl mix cooked corn, tomatoes, carrots, lemon juice, coriander leaves, salt and pepper and serve
- Corn is a good source of folate, vitamin B and rich in several other nutrients such as potassium, vitamin B6, riboflavin, vitamin C and fiber
- Per serving = 65 calories approximately
