Ingredients Serves - 4
- Sprouted green gram - 1 1/2 cups
- Chopped onions - 1/2 cup
- Ginger - 1 tsp
- Garlic - 2 pods
- Cumin powder - 1 tsp
- Vegetable stock or water - 2 cups
- Salt and pepper to taste
- Olive oil - 1 tblsp
- Soak green gram in water for 10 to 12 hours
- Remove the water and put in a muslin cloth - tie and hang it for 10 hours in a warm place
- If using soup strainer, just cover the green gram in the strainer with a damp cloth and keep it in a warm place
- Heat the pan with oil add ginger, garlic and saute for a minute
- Now add onions, saute till translucent
- Add sprouted green gram, cumin powder, salt and vegetable stock
- Allow it to boil and simmer until sprouted green gram is cooked
- Cool down and puree it in the blender or mixer
- Pour the puree to the pan and reheat it with required pepper
- Serve hot with croutons and drizzle olive oil on top of the soup

- Sprouted green gram has low-glycemic index so, it digests slowly and gradually releases glucose into your bloodstream, stabilising your blood sugar
