Ingredients - Serves 4
- Bread - 8 slice (wholemeal)
- Kidney beans - 1/2 cup
- Chopped onions - 1/2 cup
- Boiled potatoes - 2 nos
- Chopped ginger - 1 tsp
- Coriander powder - 1 tsp
- Cumin powder - 1/2 tsp
- Chilli powder - 1/2 tsp
- Garam masala - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Lemon juice - 1 tblsp
- Coriander leaves few
- Oil - 1 tblsp
- Salt to taste
- Soak kidney beans in water for 8 hours and pressure cook it for 3 whistles or until soft
- Heat the pan with oil and add chopped ginger saute for a minute
- Add chopped onions saute till tranlucent
- Mash the potatoes and add to the onions
- Now add all dry spices to the onion potato mixture and mix well
- Cook in a medium heat for 5 minutes and add cooked bean & salt
- Slightly mash the bean and add lemon juice & coriander leaves - sandwich filling is ready now
- Take a bread slice spread a teaspoon full of filling and cover it with another slice & toast
- Sandwich is ready to serve
- Kidney beans are good source of protein & cholesterol-lowering fiber.
- High fiber content prevents blood sugar levels from rising too rapidly after a meal
- Kidney beans are low in calories and is fat-free.
- Each sandwich = 275 calories approximately
