Spinach Sweet Potato Sandwich

Toasted whole wheat bread filled with Sauted spinach and sweet potato



Ingredients - Serves 4
  • Wheat bread - 8 slices
  • Chopped spinach - 1 cup
  • Diced sweet potato - 1 cup
  • Chopped onions - 1/2 cup
  • Ginger garlic paste - 1/2 tsp
  • Garam masala - 1/2 tsp
  • Chilli powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Grated cheese - 1/4 cup (optional)
  • Oil - 1 tbsp
  • Butter - 1 tbsp (or oil)
  • Salt to taste
Method
  • Heat the pan with oil and add ginger garlic paste
  • Saute well and add chopped onions
  • Saute for few minutes and add spinach, sweet potato, turmeric powder, garam masala, chilli powder and salt
  • Cook the vegetables until soft
  • Now heat the tava and toast one side of bread by applying butter
  • On top spread the cooked vegetables and grated cheese
  • Cover with another slice of bread and toast by gently pressing it 
  • Ready to serve


Tip - I did't add cheese, even without cheese the sandwich was so cheese because of sweet potato. You can add more or less herbs and spices according to your taste

  • Spinach is an excellent source of vitamin K, A,C, B6, B2 magnesium, calcium, folate and potassium
  • Sweet potato is rich in Vitamin A & C and it lowers blood pressure
  • Per serving = 225 calories approximately
