Celery Almond Soup

Nutritious and delicious easy homemade soup - very warming on a chilly day.




Ingredients - Serves 4
  • Large sticks of celery - 5 nos
  • Chopped onions - 1 cup
  • Chopped garlic - 1 tsp
  • Almonds - 8 to 10 nos
  • Milk - 1/2 cup
  • Vegetable stock or water - 2 cups
  • Olive oil - 1 tbsp
  • Salt and pepper to taste
Method
  • Soak almonds in warm water for 15 minutes and grind into smooth paste
  • Cut the celery sticks into pieces
  • Heat the pan with oil add chopped garlic and saute for a minute
  • Add chopped onions and celery - saute with salt and pepper
  • Add 2 cups of vegetable stock or water
  • Allow it to boil and simmer until vegetables are cooked
  • Cool down and puree it in the blender or mixer along with milk
  • Pour the puree & grounded almond paste to the pan and reheat until just hot but not boiling
  • Serve hot with croutons and drizzle olive oil on top of the soup

  • Almonds are also rich in manganese, riboflavin and copper, which provide energy
  • Per serving = 85 calories approximately
