Ingredients - Serves 4
- Large sticks of celery - 5 nos
- Chopped onions - 1 cup
- Chopped garlic - 1 tsp
- Almonds - 8 to 10 nos
- Milk - 1/2 cup
- Vegetable stock or water - 2 cups
- Olive oil - 1 tbsp
- Salt and pepper to taste
Method
- Soak almonds in warm water for 15 minutes and grind into smooth paste
- Cut the celery sticks into pieces
- Heat the pan with oil add chopped garlic and saute for a minute
- Add chopped onions and celery - saute with salt and pepper
- Add 2 cups of vegetable stock or water
- Allow it to boil and simmer until vegetables are cooked
- Cool down and puree it in the blender or mixer along with milk
- Pour the puree & grounded almond paste to the pan and reheat until just hot but not boiling
- Serve hot with croutons and drizzle olive oil on top of the soup
