Nothing gets my day started better than a good breakfast!! These pancakes are delicious, light and spongy with warm & fresh tasting blueberry sauce on top
Ingredients - Serves 4
- Wheat flour - 1 1/4 cups
- Baking powder - 1 tsp
- Baking soda - 1/4 tsp
- Vanilla essence - 1 tsp
- Banana - 3 nos (mash 1 banana and slice the rest)
- Milk - 3/4 cup (skim milk)
- Warm water - 3/4 cup
- Brown sugar - 2 tblsp
- Blueberry - 1/2 cup
- Honey - 2 tbsp
- Oil - 1 tbsp
- Heat the pan, add blueberry, 2tblsp of water and honey
- Cook over a gentle heat for two minutes, or until the blueberries have softened slightly - blueberry sauce is ready
- Sift wheat flour, baking powder and baking soda in a mixing bowl - dry ingredients
- In a small bowl whisk wet ingredients - vanilla essence, brown sugar, one mashed banana, milk and warm water
- Add wet ingredients to the dry and mix well without any lumps
- Heat skillet, spread some oil and pour ladle full of batter
- Spread slightly with the back of the ladle
- Cook until small bubbles appear on the surface and the bottom turns to golden colour
- Flip to other side and cook for a minute - repeat the process with rest of the batter and your pancakes are ready
- Now place a pancake on a plate and arrange some sliced bananas on top - repeat till you get a pancake banana stack up as shown in the picture
- Add a scoop of blueberry sauce on top and serve warm
- Bananas are good sources of potassium, which is essential for maintaining normal blood pressure and heart function
- Bananas are known for antacid effects that protect against stomach ulcers
- Blueberry contains anti-oxidant, vitamin C and E, as well as heart-healthy fibers
- Per serving (2 pancakes with sliced banana 1 tblsp blueberry sauce) = 100 calories approximately
