Avocado Cucumber Salad

Avocado cucumber salad is very refreshing, scrumptious and filling. This salad does not need any oil dressing because of avocado's buttery taste. Lemon juice in this recipe brightens the flavour.




Ingredients Serves - 4
  • Avocado - 2 nos (ripe, halved, deseeded & peeled)
  • Seedless cucumber - 1
  • Tomatoes medium size - 2 nos (deseeded)
  • Coriander leaves few
  • Greek yogurt - 1/4 cup
  • Rye crispbread - 8 nos
  • Lemon juice - 2 tblsp
  • Sat and pepper to taste
Method
  • Chop avocado, cucumber, tomatoes into cubes
  • In a mixing bowl mix avocado, cucumber, tomatoes with lemon juice, salt, pepper and chopped coriander leaves
  • Place a spoon full of salad on a rye crispbread with a teaspoon of yogurt on top

  • Avocados are rich in vitamins A, B, C, E, and K, copper, phosphorus, magnesium, and potassium - you need to eat two or three bananas to obtain the potassium content of one avocado
  • Great source of potassium in avocado helps in controlling high blood pressure
  • Avocado is rich in fibre , protein and also high in fat content, but it is mostly the monounsaturated fat which is a healthy fat variety
  • The avocado has 200 calories for 100 grams. Due to the high amounts of calories, avocado is a best diet for people who want to gain weight
  • Cucumber helps us to reduce weight because of low calorie content and is rich in fibre
  • Per serving salad = 120 calories approximately
