Capsicum Peanut Masala

Capsicum in tangy and spicy peanut sauce is a perfect side dish with roti, pulkas and jeera rice









Ingredients - Serves 4
  • Capsicum - 1 cup ( any colour, diced)
  • Chopped onions - 1 cup
  • Chopped Tomatoes - 1/2 cup
  • Roasted peanuts - 1/4 cup
  • Roasted Sesame seeds - 1 tblsp
  • Chilli powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Thick tamarind juice - 2 tblsp
  • Cinnamon stick - 1/2 inch
  • Jaggery - 2 tsp
  • Salt to taste
  • Oil - 2 tblsp

Method
  • Grind roasted peanuts and sesame seeds into a smooth paste by adding water
  • Heat the pan with oil and add cinnamon stick
  • Add onion and sauté till translucent
  • Now add tomatoes and sauté for few minutes 
  • Add capsicum, chilli powder, turmeric powder, tamarind juice and required salt
  • Cook capsicum in a medium heat until soft not mushy
  • Add grounded paste and little water
  • Stir well and simmer it for few minutes (until you get required consistency)
  • Add jaggery and coriander leaves and mix well
  • Serve hot with roti or jeera rice
